Appalachian State University has inaugurated the Mofford and Giffin Food Hub at its Hickory campus, providing a critical resource for students experiencing food insecurity. This initiative is funded by David Mofford and Zac Giffin, both of whom have deep ties to the locality. The new food hub is an extension of the university's Mountaineer Food Hub network, consisting of 17 pantries on the Boone campus and one at a lab school in Walkertown.
The food hub inauguration event, held on February 28, was attended by the donors, their families, university officials, and members of the campus community. Sue Polanka, Dean of University Libraries, stated, “Both of them have wonderful, giving hearts, and today we honor them for their outstanding character and support of App State students.”
Polanka, who oversees the food pantry at Boone and supports the Hickory hub, highlighted the importance of addressing food insecurity on campus. “When you are hungry, or worried about your next meal, it’s very hard to learn,” said Polanka. “App State’s food hubs help our students, faculty and staff rise above these challenges, to eliminate the worry and help ensure our students can thrive.”
The Appalachian State’s food pantry network distributed over 28,000 pounds of food in 2024 alone. “David and Zac are helping extend this important work to our Hickory campus,” Polanka remarked.
Mofford refers to his upbringing in the Catawba Valley to explain his motivation for philanthropy. He remarked, “The Mountaineer Food Hubs across the university provide a safe, nonjudgmental space for support during times of need.”
Giffin’s philanthropic background is also extensive, having supported efforts at Duke Health Development.
